Add the zucchini and bell pepper; cook and stir for 1 minute. Pour in the lime juice, soy sauce, maple syrup, coconut milk, and tofu. Wicked Garlic Tofu Saute - Vegetarian Recipes - Best Vegetarian Recipes
Wicked Garlic Tofu Saute
Recipe By:LittleGreyKitten
"Amazingly fast and tasty recipe, very healthy too. Even the husband (not normally a huge tofu fan) enjoys it. I love it with tons of garlic but you can use less if you must. The oyster sauce I don't measure so it's approximate. It's pretty salty so use it to your taste. You could serve it with cooked white rice, but it's just as good plain."

Ingredients

  • 1 tablespoon olive oil
  • 1 (14 ounce) package firm tofu, drained and cubed
  • 1 (16 ounce) package frozen broccoli, carrots and cauliflower
  • 1/4 cup oyster sauce
  • 6 cloves garlic, crushed or to taste
  • 1/3 cup chicken broth

Directions

  1. Heat olive oil in a large skillet over medium heat. Add tofu, garlic, and about half of the oyster sauce. Cook for about 5 minutes, until garlic is lightly browned but not burning. Remove from the skillet to a bowl, and set aside.
  2. Add the frozen vegetables to the same skillet and cook vegetables according to package directions, substituting chicken broth for the water, and seasoning with the remaining oyster sauce. When vegetables are cooked, mix the tofu garlic mixture back into the pan, and heat through. Serve plain or over rice.

Japanese Tamago Egg - Vegetarian Recipes - Best Vegetarian Recipes
Japanese Tamago Egg
Recipe By:Pokerman11
"Tamago egg is classic Japanese folded omelet sometimes called tamagoyaki. The omelet is sweet, has a light texture, and works well when served over sushi rice and with soy and wasabi sauce for dipping. Tamago is the Japanese word for egg. Mirin is sweet rice wine and dashi is traditional Japanese soup stock (make from kelp or shiitake). These ingredients are now carried in most larger grocery stores or at Asian markets."

Ingredients

  • 4 eggs
  • 1/4 cup prepared dashi stock
  • 1 tablespoon white sugar
  • 1 teaspoon mirin (Japanese sweet wine)
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon vegetable oil, or more as needed

Directions

  1. Beat eggs thoroughly in a bowl; whisk in dashi stock, sugar, mirin, and soy sauce until sugar has dissolved.
  2. Place a nonstick skillet or omelet pan over medium heat. Oil the pan with vegetable oil. Pour a thin layer of egg mixture into the hot pan and swirl to coat pan.
  3. When egg layer is firm on the bottom but still slightly liquid on top, lift up about 1 inch of the edge of the omelet with a spatula and fold end over remaining egg layer; continue rolling the omelet to the end and push the roll to the edge of the skillet. Oil the skillet again if it looks dry; pour another thin layer of egg into the skillet and lift the roll to let the egg flow underneath the omelet roll. Fold the omelet roll over the new layer of egg, continuing to roll to the end as before. Push omelet to edge of skillet.
  4. Pour a new egg layer into the skillet, oiling the pan if needed. Roll the omelet over to incorporate the next egg layer into the roll. Pour new layers and roll into the omelet until all egg mixture has been used. Remove omelet to a serving platter and cut into 6 equal pieces to serve.

Thai Stuffed Tofu - Vegetarian Recipes - Best Vegetarian Recipes
Thai Stuffed Tofu
Recipe By:Kaleas
"My first original recipe. A new approach at spicing up tofu. Easy for anyone, yet looks exotic enough for a dinner date. Has a delicate flavor related to Thai cuisine, yet uses basic ingredients most people have on hand. With this serving size, it will allow each person to get 4 pieces of stuffed tofu. Served with rice, it makes a pleasantly light meal. Serve along side a bed of rice on a plate. Drizzle with teriyaki sauce, being sure to decorate the sides of the plate. The sauce really complements the flavors of the stuffing! You can easily make it more filling by serving seared zucchini on the side and a nice, light wine. Be sure to add your own personal touches!"

Ingredients

  • 2 (12 ounce) packages extra firm tofu
  • 1/4 cup dried shiitake mushrooms
  • 1 zucchini, coarsely chopped
  • 1 onion, halved
  • 3 cloves garlic
  • 1 jalapeno pepper, seeded and coarsely chopped
  • 1 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons minced fresh ginger, or to taste
  • 1 tablespoon cornstarch
  • 1 tablespoon hoisin sauce
  • 1/4 cup shredded cabbage
  • 1/4 cup vegetable oil, divided

Directions

  1. Drain tofu and cut each piece into 4 squares; cut each square diagonally into 2 triangles. Set tofu triangles aside.
  2. Place shiitake mushrooms into a bowl of hot water and allow to rehydrate until moist and plump, about 20 minutes. Cut out woody stems and finely chop mushrooms.
  3. Place zucchini, onion, garlic, and jalapeno pepper into a food processor and process until the vegetables are almost a paste; transfer to a bowl and stir in shiitake mushrooms, egg, soy sauce, ginger, cornstarch, and hoisin sauce. Fold shredded cabbage into the stuffing.
  4. Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Pat tofu triangles dry with paper towels and pan-fry in the hot oil until browned on all sides except 1 narrow side for stuffing, 2 to 3 minutes frying time per side. Remove tofu triangles and let cool until you can handle them.
  5. With a sharp paring knife, cut a slit into the unbrowned side of a tofu triangle; scoop out center of the tofu with a grapefruit spoon, leaving the walls of the triangle about 1/4-inch thick. Use a spoon to fill each triangle generously with the stuffing, letting stuffing mound out of the tofu piece.
  6. Heat remaining 2 tablespoons vegetable oil in skillet over medium heat; place tofu triangles, stuffing sides down, into the hot oil and pan-fry until stuffing edge is browned and stuffing is hot and set inside, about 5 minutes. Turn triangles on their sides and refry for a minute or two in the hot oil to rewarm.

Sesame Asian Tofu Stir-Fry
Recipe By:Kristy Ainslie
"Thinly-sliced vegetables are stir-fried in a garlic and sesame sauce."

Ingredients

  • 6 tablespoons vegetable oil
  • 2 cloves garlic, chopped
  • 6 tablespoons soy sauce
  • 6 tablespoons rice vinegar
  • 1 tablespoon Thai chili sauce
  • 3 tablespoons honey
  • 8 ounces extra-firm tofu, cut into 1/4-inch cubes
  • 1/2 (16 ounce) package linguine pasta
  • 1 tablespoon sesame oil
  • 8 ounces bean sprouts
  • 8 ounces shredded carrots
  • 1 green bell pepper, thinly sliced
  • 8 green onions, halved lengthwise

Directions

  1. Heat the vegetable oil in a wok over medium-high heat; cook and stir the garlic until lightly browned, about 2 minutes. Pour in the soy sauce, rice vinegar, chili sauce, and honey, stir to mix, and bring the mixture to a simmer. Reduce heat to medium-low, and let the sauce simmer for 10 minutes. Transfer the sauce to a bowl, and stir the tofu into the sauce. Set the tofu mixture aside.
  2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  3. While the pasta is boiling, heat the sesame oil in clean wok or large skillet; cook and stir the bean sprouts, carrots, green pepper, and green onions until the vegetables are bright in color and slightly wilted, about 5 minutes. Pour in the tofu with sauce and linguine; stir to combine.
